【皮料】
粘米粉100克、水200毫升、糯米粉400克、糖4茶匙、油2汤匙

【馅料】
红萝卜40克、云耳40克、沙葛100克、冬菇4朵(以上全部切丝)、虾米20 克(切碎)、蒜茸1汤匙

【调味料】
鸡精粉1茶匙、糖2茶匙、 麻油1茶匙、盐少许、胡椒粉适量、味精1/2茶匙、清水适量

【做法】
1.馅料做法:烧热3汤匙油,爆香蒜茸及虾米,加入其余馅料及调味料炒匀,盛起待用。(图 3-5)
2.皮料做法:将粉料中间推开一个穴,倒入油、水及白糖搓揉成光滑面团。
3.将面团切割成每份约20克重,包入少许馅料揉成小圆形,放入蒸锅以中火蒸10分钟或至熟透。(图 6-8)

【Skin Ingredients】
100g rice flour, 200ml water, 400g glutinous rice flour, 4 tsp sugar, 2 tbsp oil

【Filling Ingredients】
40g carrot, 40g black fungus, 100g jacama, 4pcs dried mushroom(jullienced all), 20g dried shrimp(chopped), 1 tbsp chopped garlic

【Seasoning】
1 tsp chicken stock granule, 2 tsp sugar, 1 tsp sesame oil, dash of salt & pepper, 1/2 tsp MSG, some water

【Method】
1.To prepare filling: Heat 3 tbsp oil in wok, sauté garlic and dried shrimp until fragrant, add in all remalning filling ingredients, fry well, dish out and set aside.(pic 3-5)
2.To make skin: mixes ingredients and open a well in the centre, pour in oil, water and sugar, knead into smooth dough.
3.Cut dough into 20g each, wrap in some filling, make into ball shape and steam with medium heat for 10 minutes or until cooked. (pic 6-8)
