三文鱼青豆焖饭Salmon Rice with Peas

【材料】
白米1杯(洗净滴干)、三文鱼180克(切丁,以1茶匙盐和胡椒粉腌妥)、食油2汤匙、牛油2汤匙、葱头2粒(剁碎)、蒜头1瓣(剁碎)、鸡高汤250毫升、青豆80克

【调味料】
盐、白糖及胡椒粉各1/2茶匙、鸡粉1茶匙、混合干香料1汤匙

【装饰】
海苔1片(切丝)

【做法】
1. 起锅热牛油和食油,把三文鱼煎至两面熟透。(图1-3)
2. 用同样的油把葱头及蒜头爆香。(图4)
3. 加入白米,炒1-2分钟后移到电饭煲里。(图5)
4. 加入鸡高汤、半份的三文鱼、青豆和调味料,搅拌均匀后试味,然后开电把饭煮熟。(图6-8)
5. 饭煮好后倒入其余的三文鱼,再盖上电饭煲,焖10分钟后才开,吃时撒上海苔丝。

【Ingredients】
1 cup rice (washed and drained), 180 g salmon (cut into 2cm cubes, marinated with 1 tsp ground black pepper, 1 tsp salt), 2 Tbsps cooking oil, 2 Tbsps butter, 2 shallots (chopped), 1 clove garlic (chopped), 250ml fresh chicken stock or water, 80 g frozen peas

【Seasonings】
1/2 tsp salt or to taste, 1/2 tsp sugar, 1/2 tsp ground white pep-per, 1 tsp chicken stock granules, 1 Tbsp dried mixed herbs

【Garnishing】1 sheet seaweed (sliced thinly)

【Method】
1.Heat oil & butter in wok until hot and pan fry the salmon cubes turning over once. Remove from heat. (pic 1-3)
2.Using the same oil in the wok lightly brown shallots, garlic until fragrant. (pic 4)
3.Put in rice. Toss for 1 or 2 minutes then remove all the ingredients to a rice cooker. (pic 5)
4.Pour in chicken stock, half of the pan fried salmon, frozen peas and seasoning to taste; cover lid and cook rice until done.(pic 6-8)
5.Once the cook button pops up, pour in all of the salmon and allow the rice to stand for 10 minutes, garnish with seaweed before serving.
