南瓜意粉煲 Pumpkin and Pasta Pot

【材料】
橄榄油1汤匙、大葱1粒(切丝)、烟肉6片(剁碎)、南瓜500克(去皮切2公分方块)、蒜头2瓣(剁细)、鲜百里香4棵,鸡高汤1杯、干意大利粉250克、鲜香菇1包(去蒂切片)、芥兰花1整粒(切小朵)、发起鲜奶油1⁄4杯、鲜九层塔及parmesan芝士茸适量
【做法】
1. 把油倒入一大深锅加热,放入蒜茸、大葱及烟肉煮5分钟,间中翻炒,待大葱软化即加入鲜百里香,炒
均。(图1-3)
2. 加入鸡高汤和2杯清水,煮滚后加入干意大利粉,转中火,不加盖煮10分钟,间中搅拌。跟着加入南瓜和
鲜香菇,焖煮5分钟,放入芥兰花翻炒至意大利粉软身,汁转稠。(图4-8)
3. 熄火,拌入鲜奶油,以盐和胡椒粉调味,再撒上适量鲜九层塔及parmesan芝士茸即可。

【Ingredients】
1 tbsp extra virgin olive oil, 1 big onion(sliced), 6 slices bacon(chopped), 500g pumpkin(peeled, cut into 2cm cubes), 2 garlic cloves(thinly sliced), 4 sprigs fresh thyme, 1 cup chicken stock, 250g dried spaghetti,
1 head broccoli(cut into small florets),1 pkt fresh mushroom(stem remove and slice), 1⁄4 cup thickened
cream, fresh basil leaves and finely grated parmesan cheese, to serve
【Method】
1.Heat oil in a large heavy-based saucepan over medium-high heat. Add chopped garlic, onion, and
bacon. Cook, stirring occasionally for 5 minutes or until onion is softened. Add thyme. Stir to combine.

2.Add chicken stock and 2 cups cold water. Cover. Bring to the boil. Add spaghetti. Reduce heat to
medium. Simmer, uncovered, for 10 minutes, stirring occasionally. Add in pumpkin and mushroom, simmer
for 5 minutes, toss in brocolli stirring occasionally, or until pasta are tender and the sauce has
thickened.(pic 4-8)
3.Remove from heat. Stir in cream. Season with salt and pepper. Serve pasta sprinkled with basil leaves
and parmesan.
