奶皇煎堆 Custard Fried Dumpling

【皮料】
橙色番薯125克、糯米粉250克、汀面粉2汤匙、糖2汤匙、水(约200毫升)
【奶皇馅材料】
吉士粉2汤匙、粟粉3汤匙、糖60克、蛋黄2粒、椰汁1⁄2杯、淡奶1⁄2杯、白兰她油2大匙
【面料】
白芝麻1小碗
【做法】
1.把奶皇馅料混合均匀,倒入钢碗中隔水蒸约25分钟,取出搅拌至幼滑,放入冰箱冷冻,然后分成一粒粒圆球,待用。(图1)
2.把番薯蒸软至熟去皮搓烂,加入其余材料搓揉成一软硬适中的粉团,再分成每份约30克重。(图2-4)
3.把粉团搓揉成圆球捏成窝形,包入一粒奶皇馅收口揉圆,沾上冷水后再滚上白芝麻。(图5-7)
4.烧热炸油,放入芝麻球炸至浮起成金黄色,捞出沥油上桌。(图8)

【Skin Ingredients】
125g orange colored sweet potato, 250g glutinous rice flour, 2 tbsp wheat starch, 2 tbsp sugar,
about 200ml water
【Custard Ingredient】
2 tbsp custard powder, 3 tbsp corn flour, 60g sugar, 2 egg yolks, 1⁄2 cup coconut milk, 1⁄2cup
evaporated milk, 2 tbsp brandy
【For Coating】
1 small bowl sesame seed
【Method】
1.Mixes custard ingredients and steam for about 25 minutes, and then blend until smooth;
apportion custard and make into ball shape.(pic 1)
2.Steam sweet potato until cooked, peel off skin and mix with other ingredients into soft dough,
apportion into 30g each.(pic 2-4)
3.Wrap each dough with custard filling and shape roundly, dip in cold water and coat with sesame
seeds.(pic 5-7)
4.Deep fry dumpling in hot oil until afloat and turn into golden brown, drain and serve.(pic 8)
