彩虹杯子蛋糕Rainbow Cupcakes

【材料】
含盐牛油1块(227克)、细糖250克、盐1⁄2茶匙、A蛋5粒、香草精2茶匙、普通面粉420克(筛过)、发粉2茶匙(筛过)、 牛奶350毫升
22个蛋糕杯子
紫、蓝、青、黄、橙及红食用色素

【奶油糖霜】
糖粉40克、鲜奶油500毫升

【奶油糖霜做法】
用电动搅拌器把鲜奶油和糖粉搅拌至顶峰。用电动搅拌器把牛油、糖及盐搅拌至发起,放入冰箱待用。

【蛋糕做法】
1.把烤炉预热至180℃。将纸杯垫入烤盘中待用。
2.用电动搅拌器把锚标牛油、糖及盐搅拌至发起。
3.逐量加入鸡白,搅拌至完全均匀。
4.加入香精搅拌均匀。
5.加入1/3面粉和发粉拌匀。
6.加入1/3牛奶拌匀。重复此动作至材料用完。
7.将蛋糕料分成6份。分别加入不同的颜色捞匀。
8.把1 1/2茶匙的紫色蛋糕料填入纸杯,接着是蓝色、青色、黄、橙及红至2/3满。
9.放入烤炉烤20-25分钟至熟,用竹签测试熟度,以不沾物为准。
10.从烤炉取出蛋糕,让它冷却后用挤袋把锚标鲜奶油糖霜挤在杯子蛋糕上。再撒上七彩糖子装饰。

【Cake Ingredients】make 22 cups
1 block salted butter, 250g castor sugar, 1/2 tsp salt, 5 large egg whites “Grade A”, 2 tsps vanilla extract, 420 g plain flour(sifted), 4 tsps baking powder(sifted),350 ml milk
22 pcs white cupcake liners
Wilton food colouring-purple, blue, green, yellow, orange and red

【Whipped Cream】
40g icing sugar(sifted), 500ml whipping cream

【To prepare cream】
Using an electric beater fitted with a whisk attachment, whisk the cold cream with sifted icing sugar until thickened. Chill till when needed.

【To prepare cake】
1.Preheat oven at 180℃ and place cupcake liners in the cupcake/muffin pan.
2.Cream butter, salt and sugar till light and fluffy.
3.Beat in egg white a little at a time, ensuring it’s well mixed.
4.Mix in vanilla extract.
5.Add 1/3 of the sifted flour and baking powder, mix well.
6.Add 1/3 of milk. Mix well. Repeat until all well incorporated.
7.Divide into 6 equal portions, add six different Wilton colouring.
8.First, scoop 1.5 teaspoons of violet batter into a cupcake liner laid in a cupcake tin, spread it evenly out with the teaspoon. Secondly spreading the blue batter, followed by the green, yellow, orange and last red batter till the batter is three quarters full only. Do not over fill.
9.Bake in pre-heated oven for 20-25 minutes or until skewer inserted comes out clean.
10.Cool and decorate with fresh cream and sugar crystals.
