德国炸肉扒 Veal Chop “Jaegerschnitzel”

【材料】
小牛扒6副(10公分宽 x 0.8公分厚)、盐和黑胡椒粉各1茶匙、普通面粉5-6汤匙
【酱汁材料】
牛油2-3汤匙、蒜头2瓣(剁碎)、月桂叶1片、黄大葱1粒(一半切丁一半剁碎)、红萝卜1条、西芹2条(各切丁)、鲜百里香2-3束、红酒250毫升、牛高汤375毫升、盐适量
【伴碟材料】
牛油2汤匙、鲜菇1包(切片)、盐和胡椒粉适量
【做法】
1.将所有蔬菜切丁备用。(图1-2)
2.用刀背把小牛扒敲松,以盐和黑胡椒粉腌小牛扒,然后沾面粉,拍掉多余面粉。(图3-4)
3.起锅热油,以中火把小牛扒煎5-6 分钟至金黄色后盛出。(图5)
4.用同一个锅热2汤匙牛油,放入月桂叶,大葱,红萝卜及西芹,炒5分钟至软身。(图6-7)
5.加入红酒和鲜百里香, 并把黏锅的焦渍铲起。(图8)
6.加入牛高汤,以小火焖煮约10分钟至汤汁减半。
7.加入小牛扒(连汁),继续焖煮约10分钟,中途把牛扒翻转,煮至汁稠即可。
8.另外热干净的锅,以牛油炒鲜菇约5分钟至软身,加盐和胡椒粉调味。
9.把小牛扒盛碟,淋上酱汁配炒鲜菇和薯条吃。

【Ingredients】
6 pcd shoulder veal chops 6 pcs (0.8cm X 10 cm ),1 tsp salt and 1 tsp freshly ground black pepper, 5-6 tbsps. plain Flour(for dredging)
【Sauce Ingredients】
2-3 Tbsps butter, 2 cloves garlic(chopped), 1 bay leaf。 1 large sweet onion(half diced and the other half chopped), 1 carrots(diced), 2 celery stalks(diced), 2-3 stalks fresh thyme, 250 ml red wine, 375 ml beef broth, salt to taste
【Sub Ingredients】
2 heaped Tbsps butter, 1 packet fresh mushrooms(sliced), salt & pepper to taste
【Method】
1. Chopped all the vegetables and set aside.(pic 1-2)
2. Using the back of a cleaver, lightly pound each veal chop. Season the chops with salt and pepper then
dredge in flour, patting off excess flour. (pic 3-4)
3. In a large pan over medium-high heat, add enough oil to coat bottom of the pan. Sear chops until golden brown,
about 5 to 6 minutes per side. Remove from pan and set aside. (pic 5)
4. In same pan, add 2 Tbsps butter, sautébay leaf onions, carrots and celery until tender, about 5 minutes. (pic 6-7)
5. Add the wine, fresh thyme leaves, and scrape up the brown bits that cling to the bottom of the pan with a wooden spoon. (pic 8)
6. Add the broth, bring to a simmer and reduce sauce by half, about 10 minutes.
7. Add the veal and sauce back to the pan and bring to a simmer. Cook uncovered another 10 minutes, flipping the veal halfway through, until sauce thickens slightly.
8. In a clean pan, over medium heat, add butter, sauté fresh mushrooms, and cook until tender, about 5 minutes. Season with salt and pepper, to taste.
9. Serve veal chops “Jaegerschnitzel” with sauce, the buttered mushroom on the side and fries.
