潮州卤鸭Teochew Style Braised Duck

卤鸭是古早传统潮州菜中不可或缺的一道特色菜。福建式的卤汁较甜,潮州式的卤汁则趋向咸味。

    Directions

    Step 1

    鸭子处理好,洗净备用。Washed the duck and set aside.

    Step 2

    把其它全部材料去皮洗净备用。Peel and wash all ingredients for later use.

    Step 3

    取锅倒入香料包、桂皮、八角、小葱头、蒜头和姜后,再加入掩盖过材料3份的清水。Put the spice herb pack, cinnamon sticks, star anise, shallot, garlic and ginger into a large pot, pour in three times amount of the water.

    Step 4

    开大火煮滚10分钟后调小火,加入所有调味料小火煮滚。Bring to a boil over high heat for 10 minutes, then reduce the heat to low, add all the seasonings and bring to a boil.

    Step 5

    把鸭子放入锅内,上下提出三次后,再把鸭子放入锅内焖煮。Put the duck into the pot, lift it up and down three times then keep the duck into the pot.

    Step 6

    开大火煮滚后,调小火焖煮1个小时半后再开大火煮滚后熄火。Bring to a boil over high heat, simmer on low heat for an hour and a half, then turn on high heat and bring to a boil, then turn off the heat.

    熄火后再泡20分钟即可取出放凉后,砍件享用。Turn off the heat and soak for 20 minutes, then take it out and let it cool, cut into pieces and enjoy.
