烤脆鱼柳Baked Fish Fillet with Herb Crust

【材料】
A:鱼柳1片、法国芥末籽酱30克、芦笋100克、牛油20克
B:面包糠100克、西洋芫茜叶30克(切碎)、蒜茸1汤匙 、牛油15克、盐1⁄4茶匙
C:紫番薯(煮熟)250克、牛油10克、鲜奶油1⁄4杯、盐 1⁄2茶匙、胡椒粉1⁄4茶匙
D:法国芥末籽酱20克、鲜奶油1⁄2杯、糖和盐各适量

【腌鱼料】
盐1⁄2茶匙、黑胡椒粉1⁄2茶匙、甜椒粉1茶匙

【做法】
1.用腌鱼料将鱼柳腌好。(图1)
2.在平底锅煮溶10克牛油,放入鱼柳煎至两面金黄即可。(图2)
3.把全部B料搅拌均匀成香料脆皮备用。(图3)
4.将鱼柳涂一层芥末籽酱,再铺上一层意大利香菜脆皮。(图4)
5.把鱼柳放入预热至180℃的烤箱烤约8分钟至表面金黄即可。(图5)
6.准备平底锅,加入材料A的剩余牛油,把芦笋炒香备用。(图6)
7.把煮熟的紫番薯压成泥,加入其余材料C搅拌均匀,盛出排盘底,叠上芦笋及烤鱼柳。(图7)
8.把鲜奶油煮开,加入其余材料D煮滚,淋在鱼柳旁上桌。

【Ingredients】
A:1 pc fish fillet, 30g French mustard seed sauce, 100g asparagus, 20g butter
B:100g bread crumb, 30g parsely (jullienced), 1 tbsp chopped garlic, 15g butter, 1⁄4 tsp salt
C:250g purple sweet potato, 10g butter,1⁄2 cup fresh cream, 1⁄2 tsp salt, 1⁄4 tsp black pepper
D:20g French mustard seed sauce, 1⁄2 cup fresh cream, salt and sugar to taste

【Fish Marinade】
1⁄2 tsp salt, 1⁄2 tsp black pepper, 1 tsp paprika powder

【Method】
1.Rub the fish fillet with its marinade.(pic 1)
2.Melt 10g butter in pan, sear the fish fillet until both sides turns golden brown.(pic 2)
3.Mix all B ingredients into herbs crust.(pic 3)
4.Spread a layer of French mustard seed sauce on top of fish fillet and then covered with a layer of herb crust.(pic 4)
5.Bake the fish fillet in pre-heat oven at 180℃ for about 8 minutes or until golden brown.(pic 5)
6.Stir-fry asparagus with remaining butter A, set aside.(pic 6)
7.Mash sweet potato with all ingredients C , arrange on serving plate, top with asparagus and baked fish.(pic 7)
8.Boil fresh cream with all ingredients D, serve with baked fish fillet. (pic 8)
