肉松凤梨炒冷饭 Fried Rice with meat floss

材料 :
冷饭3碗、黄梨2片(切丁)、虾仁60克、葡萄干1汤匙、鸡旦2粒(打散)、肉松3汤匙、腊肠2条(切丁)、葱花1汤匙、
炸香腰豆1小碗
调味料 :
盐1/2茶匙、鸡精粉1茶匙、鱼露2茶匙、胡椒粉少许
做法 :
1. 虾仁放入滚水中川熟,捞出,备用。
2. 下油2汤匙烧热,倒入旦液炒熟,盛起备用。
3. 再下一汤匙油,放入腊肠丁炒香,跟着下冷饭,炒至松散。
4. 加入黄梨、虾仁、葡萄干及调味料,翻炒均匀。
5. 沿镬边再加入适量油及葱花,炒至饭干身。
6. 盛起炒饭,面上铺上腰豆及肉松即可。

INGREDIENTS :
300g minced meat, 4 pcs water chestnut (chopped),1 small piece processed squid (chopped andsoaked), 2 eggs, 1 tbsp chopped spring onion
SEASONING :
2 tbsp soy sauce, 1 tbsp corn flour, 1 tsp oystersauce, drops of sesame oil, 3-4tbsp water, dash
of salt & pepper
METHOD :
1. Marinate minced meat with seasoning andblend with hand until springy.
2. Add in water chestnut, squid and egg andmixes well.
3. Spread mixture onto steaming plate; and thensteam in high heat for 20 minutes or until cooked.
4. Dish out and sprinkle spring onion on top andpour garlic oil over and serve.
