排骨洗净飞水备用。To Blanch pork ribs with boiling water.
取锅一个加入清水3公升,下胡椒粉、包菜、胡萝卜、姜和蒜。Take a pot and add 3 liters of water, add pepper, cabbage, carrot, ginger and garlic.
开大火煮滚10分钟,然后下排骨入锅,大火煮滚10分钟,滤掉浮沫以免影响口感。Boil on high heat for 10 minutes, then put the ribs into the pot, boil on high heat for 10 minutes, remove the scum.
调小火炖煮30分钟,即下鱼露调味享用。Reduce the heat and simmer for 30 minutes, then season with fish sauce and enjoy.
