苋菜咸鱼焗饭Baked Spinach & Salted Fish Rice

【材料】2人份
梅香马鲛鱼1块(去骨切丁)、蒜头5瓣(切片)、苋菜1把(只取叶子)、白饭2人份量、Mozzarella芝士适量

【调味料】
姜蓉1汤匙

【做法】
1.热锅,下1汤匙油,将蒜片煎至发出香味。
2.然后加入梅香咸鱼丁,与蒜片一起香煎至呈金黄色。(图1)
3.加入白饭,翻炒至均匀。(图2)
4.加入苋菜和姜蓉,翻炒均匀后将苋菜梅香咸鱼炒饭盛入耐烤餐具内。(图3)
5.撒上芝士,放入烤箱,用180度,上下火烤15-20分钟或焗饭表面呈金黄色即可。(图4)

【Ingredients】2 servings
1 pc salted Mackerel (debone & diced), 5 pips garlic (sliced), 1 bunch spinach (leaf only), 2 bowls white rice, some Mozzarella cheese

【Seasoning】
1 tbsp chopped ginger

【Method】
1.Heat 1 tbsp oil in wok, sauté garlic slices until fragrant.
2.Add in salted fish and sauté with garlic until aromatic.(pic 1)
3.Pour in white rice and stir to mix.(pic 2)
4.Toss in spinach and ginger, stir well and dish into baking container.(pic 3)
5.Sprinkle cheese on top and bake in pre-heated oven at 180℃ for 15-20 minutes or until the top is golden brown, done.(pic 4)
