    Step 1

    苦瓜切片,汆烫去苦味备用。Slice the bitter gourd, blanch with boiling water to remove the bitterness and set aside.

    Step 2

    咸菜切小条飞水去咸味备用。胡萝卜切片备用。Cut the Teochew salted vege into small strips and blanch with boiling water to remove the saltiness for later use. Sliced carrots and set aside.

    Step 3

    热锅免油把咸菜炒干水份,加适量油下姜和蒜大火炒香。Fry the Teochew salted vege in a wok without oil until dry. Then add some oil and fry the ginger and garlic over high heat until fragrant.

    Step 4

    下苦瓜大火翻炒至香,下胡萝卜片,加入适量的开水焖煮至干水收汁。Add the bitter gourd stir fry until fragrant, add the carrot slices and some water then simmer until the sauce is absorbed.

    Step 5

    加入鱼露和白糖炒拌均匀即可。Add in fish sauce and sugar and stir well, done.
