菜香豆腐Stuffed Tofu

【材料】
生花豆腐4块、罐头香菜心4大块(切碎)、素香酥鸡150克、素蚝油2茶匙、素虾米2大匙(炸脆)

【味汁】
盐1/4茶匙、素蚝油1大匙、酱油4大匙、糖1茶匙、味素1茶匙、水1杯

【勾芡】
粟粉2茶匙、水2大匙

【装饰】
芫荽、红辣椒各少许

【做法】
1.将生花豆腐用油炸至金黄色上碟,豆腐中间挖一个洞备用。
2.烧热2大匙油、炒素香酥鸡至香、加入香菜心碎和素蚝油炒香关火,加入炸脆虾米即可放上豆腐中。
3.将味汁煮滚,勾芡,然后淋上豆腐中,放上芫荽红辣椒装饰,趁热享用。

【小贴士】
涂一层盐在豆腐上,可蒸发豆腐水份,炸时不会被油烫到手。

【Ingredients】
4 blocks soft tofu, 4pcs canned pickled Sawi (chopped), 150g fried mock chicken, 2tsp vegetarian oyster sauce, 2tbsp mock dried shrimp (deep fried)

【Seasoning】
1/4tsp salt, 1tbsp vegetarian oyster sauce, 4tbsp soy sauce, 1tsp sugar, 1tsp MSG, 1 cup water

【Thickening】
2tsp corn flour, 2tbsp water

【Garnishing】
Some coriander & red chili

【Method】
1.Deep fry tofu until golden brown, then place on plate and hollow out a hole in centre.
2.Heat up 2tbsp oil and sauté mock fried chicken until fragrant, toss in chopped pickled Sawi and vegetarian oyster sauce, and then mix in fried mock shrimp, pour into the hole of tofu.
3.Cook seasoning and thicken with starch, then pour on top of tofu and garnish.
