蒜茸柠汁蒸石甲 Steamed Siakap with Lemon Garlic

【材料】
全目鱸(淡水石甲鱼)1条、蒜头1大粒(剁碎)、红辣椒碎1条、指天椒碎3条、柠檬茸1茶匙、芫茜/葱/红辣椒丝适量
【酱汁】
鱼露1汤匙、味精1⁄2茶匙、油1汤匙、糖少许、水2汤匙、柠檬汁2 1⁄2汤匙(最后下)
[做法]
1.将鱼洗净,搽上少许盐,腌10分钟。(图1)
2.把切碎的材料与酱汁拌匀铺在鱼面上。(图2-3)
3.待蒸锅的水大滚后,移入以大火蒸10分钟至熟。(图4)
4.取出淋入柠檬汁及芫茜/葱便可趁热享用。(图5)

【Ingredients】
1 fresh water Siakap, 1 whole garlic (chopped), 1 red chili(chopped), 3 chili padi (chopped), 1 tsp lemon rind, some
juliennes coriander, spring onion and red chili
【Sauce ingredients】
1 tbsp fish sauce, 1⁄2 tsp MSG, 1 tbsp oil, dash of sugar, 2
tbsp water, 2 1⁄2 tbsp lemon juice (add last)
【Method】
1. Wash fish and marinate with dash of salt for 10 minutes.(pic 1)
2. ombine all chopped ingredients and sauce in bowl andspread on top of fish.(pic 2-3)
3. Steam fish with boiling water for 10 minutes or untilcooked.(pic 4)
4. Pour in lemon juice and juliennes ingredients. (pic 5)
