金沙巧克力月饼 Chocolate Ferero Mooncake

┃巧克力冰皮材料┃
糕粉120克、可可粉30克、糖粉30克(过筛)、白油70克、冷水100-120毫升
┃馅料┃
金沙巧克力6粒、友爱莲蓉馅360克
┃做法┃
1. 巧克力冰皮做法:将糕粉、可可粉及糖粉混合备用。(图1)
2. 加入白油混合成粗粒状。(图2)
3. 加入冷水混合成软面团,分成6等分。

馅料做法:

取60克友爱莲蓉馅包入1粒金沙巧克力,包好。(图3-4)
┃组合┃
1.取一份巧克力冰皮料,压平包入金沙莲蓉馅包好。(图5)
2.在月饼模里撒上少许粉,把面团压入饼模具里,然后轻扣出来。(图6-8)
3.收入冰箱冷吃。

| CHOCOLATE SNOW SKIN INGREDIENT |
120g koh fun, 30g cocoa powder, 30g icing sugar (sifted), 70g shortening, 100-120ml ice water
| FILLING |
6 pcs Ferrero Rocher, 360g YU-AI lotus paste
| METHOD |
1.To make chocolate snow skin: Mix together koh fun, cocoa powder and icing sugar. (pic 1)
2.Rub in shortening till everything became fine crumb. (pic 2)
3.Stir in ice water till soft dough is formed. Divide into 6 portions.
4.To make filling : Scale 60g YU-AI lotus paste & wrap over the Ferero chocolate. (pic 3-4)
| TO ASSEMBLE |
1.Now, wrap lotus paste with chocolate dough then nicely sealed. (pic 5)
2.Finally, dust koh fun on the mould; then place the mooncake inside. Press out. (pic 6-8)
3.Best to keep refrigerated before serving.
