香根肉碎 Grilled Fragrant Stick

【材料】
肉碎350克、香茅3支、虾米1大汤匙(剁碎)、小葱头5粒(剁碎)、香茅茸1茶匙、指天椒4条(切碎)
、芫茜1汤匙(切碎)、生粉2汤匙
【调味料】
粟粉2汤匙、鸡精粉1茶匙、胡椒粉1⁄2茶匙、盐1⁄2茶匙
【做法】
1. 将香茅剥除老叶部份,用小刀在香茅上划出路纹,并抹上一层薄薄的生粉待用。(图1-2)
2. 虾米以少许油炒香,盛入大碗中,加入肉碎、小葱碎、香茅茸、指天椒碎、芫茜碎及调味料拌匀,即为馅料。(图3)
3. 取约3大汤匙的馅料,包裹香茅支上,再扑上薄薄一层生粉。(图4)
4. 排入烤盘中以180℃上下火烤约15-20分钟。可蘸辣椒酱享用。(图5)

【Ingredients】
350g minced meat, 3 stalks lemon grass, 1 tbsp chopped dried shrimp, 5 shallots (chopped), 1 tsp
chopped lemon grass, 4 chili padi (chopped), 1 tbsp chopped coriander, 2 tbsp corn flour
【Seasoning】
2 tbsp corn flour, 1 tsp chicken powder, 1⁄2 tsp pepper, 1⁄2 tsp salt
【Method】
1. Remove the old leaves of lemon grass, scale the surface with knife and then lightly coat with corn flour.(pic 1-2)
2. Sauté dried shrimp with some oil until fragrant, and then combine with minced meat, chopped
shallot, lemon grass, chili padi, coriander and seasoning. (pic 3)
3. Use 3 tbsp of minced meat mixture to wrap the lemon grass stick, and then coat with corn flour again. (pic 4)
4. Arrange in tray and bake in oven at 180℃ for 15- 20 minutes. Serve with chili sauce. (pic 5)
