香芒汁拌鸡扒 Mango Chicken Chop

【材料】
鸡全腿3只(去骨)、鸡蛋1粒
【腌料】
盐2茶匙、胡椒粉1茶匙
【炸粉料】混合
粟粉3汤匙、面粉3汤匙、蛋黄粉2茶匙
【芒果汁料】
熟芒果1粒(去皮取肉)、醋1汤匙、白糖2汤匙、蜜糖2汤匙
【做法】
1.将鸡腿与腌料捞匀腌置20分钟,加入鸡蛋拌匀并沾上干炸粉。(图1)
2.烧热适量油,放入鸡腿炸至两面熟及香脆,捞出沥油排碟。(图2-3)
3.把芒果肉放入果汁机内打成泥,倒出后放入锅中加入醋、白糖及蜜糖煮溶便可淋入鸡扒上。(图 4-6)

【Ingredients】
3 chicken whole leg (debone), 1 egg
【Marinade ingredients】
2 tsp salt, 1 tsp peppe
【Coated flour ingredients】
3 tbsp corn flour, 3 tbsp plain flour, 3 tsp custard powder
【Mango sauce】
1 ripe mango (obtain flesh), 1 tbsp vinegar, 2 tbsp. sugar, 2 tbsp honey
【Method】
1. Mix chicken whole leg with marinade ingredients for 20 minutes; and then dip with egg sauce and
coat with flour ingredients.(pic 1)
2. Heat oil in wok, deep fry the chicken whole leg until both sides are cooked and crispy, drain.(pic 2-3)
3. Puree mango flesh in an electric blender, mixes with other sauce ingredients and cook until sugardissolved; pour it over the chicken chop and serve. (pic 4-6)
