    新年必备薄薄脆脆的鸡蛋薄饼,是一道非常耗时耗力的新年饼。它富有浓郁的蛋香味,椰香味和焦糖香味。它会令你一口接一口停不下来。

    Step 1

    把盐、糖、蛋及椰浆混合,搅拌至糖溶解。加入干料继续搅拌成滑面糊。In a mixing bowl combine salt, sugar, eggs and coconut milk, stir until sugar dissolves, sieve into a clean bowl. Add dry ingredients and stir to combine.

    Step 2

    把鸡蛋饼模放在炭火上预热,待够热后涂油,再加热。 Heat the empty kuih kapit love letters moulds on the charcoal fire. When it is hot enough oil the mould and reheat again.

    Step 3

    把面糊搅动,然后舀一勺淋在热饼模中,夹紧,让多余的面糊流回装糊的碗里,把饼模放在炭火上,记得把饼模扣子锁上。Stir the batter, take a small ladle and pour into the hot mould, close the lid, allow the extra batter to drain off and place the mould on the charcoal stove. Remember to lock the mould handle.

    Step 4

    模饼周围会有焦块,用刀刮掉后再烤。There will be hardened batter surrounding the mould. Take a knife and scrap them off. Return the mould to the fire.

    Step 5

    把饼模翻转再烤,期间不时打开检查,转金黄色即可用手把“信纸”掀起,放在桌面,迅速折成三角形状,然后让它冷却。Turn the mould to the other side. From time to time have a peek at the love letter. Remember to keep an eye on it. When it is golden brown, peel off the love letter and quickly fold into quarter, leave it to cool. The biscuit will be hardened at this stage so if you want it flat, leave it on a flat surface.

    Step 6

    重复工序至面糊用尽,如果面糊在后期转干,可额外加入1-2汤匙的后备椰浆。Repeat making until all the batter is finished. Add 1-2 tbsp coconut milk when batter becomes too thick.

    Step 7

    冷却后把鸡蛋饼收入罐子。Store into airtight containers once the love letters are cool.
