黄梨照烧鸡Teriyaki Chicken with Pineapple

【材料】
白米300克(洗净滴干)、清水400-420毫升 + 适量盐
食油3-5汤匙、蒜头2瓣
鸡胸肉500克(切小块)

【腌料】
黑酱油1/4茶匙、蚝油1汤匙、胡椒粉 ¼茶匙、姜汁3汤匙、白糖3汤匙、麻油1茶匙。生粉1茶匙。盐1/2茶匙
额外50-60毫升清水 (备用)、葱白适量、青葱供装饰、黄梨1/4粒(切厚片)

【做法】
1.用腌料腌鸡肉,收在冰箱至少一小时。
2.起平底锅热油,大火煎鸡肉,翻转一次,然后盛出置放一旁;腌汁保留至煮饭时用。
3.用同一个锅把黄梨煎锅,盛出。
4.用剩油把蒜头爆香。
5.加入青葱和白米,再炒2分钟,然后加入清水和剩余腌汁,煮至饭即将熟透时盛出,移到耐热烤盘里。
6.把半熟鸡肉铺在上面,以黄梨片间隔。撒入少许水,然后放入烤炉烤约10分钟或至鸡肉熟透即可。

【Ingredients】
300 g long grain rice, washed and drain
400 – 420 ml water + salt to taste
3-5 Tbsps cooking oil
2 cloves garlic, chopped
500 g chicken breast meat , sliced into bites sizes

【Marinates】
¼ tsp dark soya sauce
1 Tbsp oyster sauce
¼ tsp ground white pepper
3 Tbsps ginger juice
3 Tbsps sugar
1 tsp sesame oil
1 tsp corn flour
½ tsp salt
extra 50-60 ml water for drizzling over later
some white part of the spring onions, cut to stir fry
spring onions for garnishing
¼ pineapple, sliced thickly

【Method】
1.Marinate chicken pieces with marinates for 1 hour in the refrigerator.
2.Heat oil, pan fry the chicken pieces over high heat turning over once. Remove and set aside. Keep the marinade liquid from the chicken; use to cook the rice later.
3.Pan fry the pineapple slices, remove and set aside.
4.Using the balance oil, sauté chopped garlic till browned.
5.Add in spring onions, rice and stir fry for another 2 minutes. Add water, and the balance of the chicken marinade and allow the rice to cook until almost cooked in the wok before dishing it out onto a greased oven proof tray to be baked.
6.Top the rice with the half cooked chicken pieces, alternating with the pineapple slices.
7.Drizzle some water over and bake for 10 minutes or until chicken is thoroughly cooked.
