    海参、鱼鳔、冬菇与蚝干,是年菜指定材料之一,也是完美组合,寓意吃了富贵又荣华。

    Step 1

    把事先处理过的海参和鱼鳔切块,然后和全部材料各别汆烫。Cut pre-processed sea cucumber & fish maw into pieces, and then blanch each at a time with all other ingredients A in boiling water.

    Step 2

    把豆根炸至金黄色。Deep fry gluten until golden brown.

    Step 3

    留少许油在锅里,把材料A和调味料炒香后加入上汤和豆根,焖约10分钟后勾芡。Keep some oil in wok, stir-fry all ingredients A and seasoning until fragrant, then pour in stock and gluten, simmer in low heat for 10 minutes, thicken with starch.

    Step 4

    小白菜汆烫后排在碟边,把焖好的材料放在碟中,用锅中余汁把发菜拌炒一下,淋在海味煲上即成。Blanch vegetable and arrange in plate, place braised ingredients in the centre. Braised Fatt Choy with remaining gravy in the wok for a while, sprinkle on top of the dish and serve.
