酸甜炸鱼柳 FRIED FISH WITH TANGY VINEGAR SAUCE

材料
石甲鱼柳250克、黄色灯笼椒20克(切丁)、番茄½粒(切小块)、蒜头2瓣(切片)、姜丝1汤匙
腌料
盐¼茶匙、胡椒粉¼茶匙、绍兴酒½茶匙、蛋白½粒、生粉2汤匙
酸醋酱汁
黄糖2汤匙、苹果醋1汤匙、陈年黑醋1汤匙、盐½茶匙、鱼露1茶匙、清水50-70毫升
做法
1 鱼肉洗净抹干,以腌料腌10分钟。(图1-2)
2 起锅热油至五成热,将鱼肉炸至酥脆,盛出。(图3)
3 镬内热1-2汤匙油,爆香姜丝和蒜头。(图4)
4 注入酸醋酱汁材料煮至滚。(图5)
5 加入番茄和灯笼椒煮至汁稠,放入鱼肉煮片刻即可上桌。(图6-7)

INGREDIENT
250g fish fillet (siakap), 20g yellow capsicum (cubed),½ tomato(cut into wedges), 2 cloves garlic (sliced), 1
tbsp shredded ginger
MARINADE
¼ tsp salt, ¼ tsp pepper powder, ½ tsp Shia Xin wine,½ egg white, 2 tbsp potato starch
VINEGAR SAUCE
2 tbsp brown sugar, 1 tbsp apple cider, 1 tbsp balsamicvinegar, ½ tsp salt, 1 tsp fish sauce, 50-70 ml water
METHOD
1 Rinse fish fillet and wipe dry, marinate with marinadeingredients, set aside for 10 minutes. (pic 1-2)
2 Heat oil till 50% hot, fry fish till crispy and cooked.Dish out and set aside. (pic 3)
3 Heat 1-2 tbsp oil, sauté ginger and garlic till fragrant.(pic 4)
4 Pour in vinegar sauce and simmer to a quick boil.(pic 5)
5 Add in tomato and yellow capsicum, cook until saucethickens. Add in fish and cook for a while, off heat. (pic 6-7)

 

苦瓜番茄肉片汤  Bitter gourd & Tomato Soup

【材料】
苦瓜100克、番茄1粒、猪肉80克、水1大碗、姜2片
【调味料】
盐1⁄2茶匙、鸡精粉1⁄2茶匙、胡椒粉少许
【做法】
1. 将苦瓜去瓤切片,然后加入1茶匙盐抓洗,并以清水冲洗干净。
2. 番茄切瓣,猪肉切片以少许粟粉及麻油拌匀。
3. 锅中煮滚水,放入苦瓜及姜片煮约2-3分钟。
4. 加入肉片及番茄煮约1分钟。
5. 调入味料便可上桌。

【Ingredients】
100g bitter gourd, 1 tomato, 80g pork meat, 1 bowlwater, 2 slices ginger
【Seasonings】
1⁄2 tsp salt, 1⁄2 tsp chicken powder, dash of pepper
【Method】
1. Remove seeds of bitter gourd, wash with 1 tsp saltand then rinse.
2. Cut tomato into wedges, cut pork meat into thinslices and then marinate with dash of corn flour and
sesame oil.
3. Bring water to boil in wok, add in bitter gourd andginger, boil for 2-3 minutes.
4. Add in meat and tomato, boil for 1 minute.
5. Season to taste.

【材料】
包菜、红萝卜、豆角各30克(均切丝)、鸡蛋6粒(打散)、葱1棵(切丝)、粟粉1汤匙(加入少许水混匀)
【调味料]
鸡精粉1茶匙、胡椒粉少许、盐少许
【做法】
1. 将鸡蛋加入粟粉水拌匀。
2. 在平底不黏镬中烧热适量油,放入切丝的蔬菜拌炒。
3. 加入调味料翻炒均匀,跟着徐徐倒入鸡蛋液煎至两面呈微焦及熟便可。
4. 上桌前将蔬菜蛋饼切成三角形。
【Ingredients】
30g each of cabbage, carrot & French bean (julinnnes), 6 eggs (beaten), 1 stalk spring onion (juli-ennes), 1 tbsp corn flour (mix wit some water)
【Method】
1. Mix egg with corn flour solution.
2. Heat non-stick pan with some oil in medium heat,sauté juliennes ingredients.
3. Toss in seasoning, and then pour in egg sauce,sear until both side turns brown and cooked.
4. Cut vegetable omelette into triangle shape to serve.
