【周日烘焙】棉花糖派Marshmallow Pie

【材料】
疏打饼12块(压成1½杯饼碎)、溶解无盐牛油6汤匙、白糖2汤匙

【馅料】
鲜奶油250毫升、半甜巧克力220克(剁碎)、栗米粉10克、A蛋3粒、芝士奶油250克、香草精1茶匙、迷你棉花糖2杯、巨型棉花糖2杯

【做法】
1.把烤炉预热至180°C。
2.皮料做法:把所有材料混合后铺在9寸派皮盘里,压紧底部和周围后放入烤炉烤约10分钟,然后在架子上冷却。(图1)
3.馅料做法:用锅以中高火煮鲜奶油至滚,另外把巧克力放在一个碗里,倒入热鲜奶油,待5分钟筛入粟米粉后搅拌至细滑。(图2-3)
4.然后把鸡蛋、芝士奶油及香草精加入,一起搅拌均匀。加入可尼斯迷你棉花糖,捞匀后倒入派皮料上,入烤炉烤约25分钟,然后在架子上待凉。(图4-7)
5.吃前预热烤炉,然后把派盘放在离烤炉热源5寸处,上面撒入可尼斯巨型棉花糖,烤至微焦即可,要留意火候,以免烤焦。(图8-9)
6.温吃或冷藏均可。

【CRUST INGREDIENTS】
12 crackers(crushed into 1 ½ cups crumbs), 6 tbsp melted unsalted butter, 2 tbsp sugar

【FILLING】
250ml heavy cream, 220 g semi sweet chocolate(chopped), 10g corn flour, 3 large eggs, 250g cream cheese, 1 tsp vanilla extract, 2 cups  Mini Marshmallows, 2 cups  Mega Marshmallows

【METHOD】
1.Preheat oven to 180°C.
2.Make crust: Combine all ingredients and transfer to a 9-inch pie plate. Press evenly over bottom and sides. Bake until firm, about 10 minutes. Cool completely on a wire rack. (pic 1)
3.Make filling: Bring cream to a boil in a small pan over medium-high heat. Place chocolate in a bowl; pour cream on top. Let sit for 5 minutes, then stir in corn flour until smooth. (pic 2-3)
4.Add in eggs, cream cheese and vanilla mix well. Add in Mini Marshmallows, stir well, pour into crust; bake until set, about 25 minutes. Cool on a rack. (pic 4-7)
5.Just before serving, preheat broiler to high. Set on oven rack 5 inches from heat source. Spread Marshmallows over top of pie.
Broil until toasted, watching carefully to prevent scorching.(pic 8-9)
6.Remove and serve warm or chill.
