【材料】
A:中鸭1只(约1.6公斤)
B:青葱10棵、子姜1片、花椒10克、桂皮2支、八角2粒

【腌料】(拌匀)
桂末粉1茶匙、盐1汤匙、鸡精粉2茶匙

【调味料】(拌匀)
绍兴酒1汤匙、生抽1汤匙

【酱料】(拌匀)
甜豆酱1汤匙、生抽2汤匙、黑酱油1汤匙、糖2汤匙、芝麻酱1汤匙、水5汤匙

【配料】
青葱丝20克、青瓜条10小段、迷你花包10粒

【做法】
1.鸭洗净抹干,用一半腌料涂抹在鸭子内部,另一半涂抹在外皮,腌制2小时以上。 (图1)
2.接着,再将鸭身上抹上调味料,然后放入材料B拌匀,送入蒸炉蒸至2小时。 (图2)
3.拌匀酱料以慢火煮至浓稠。
4.最后,将油烧至7成热,将鸭子沾上少许木薯粉炸至香脆,捞起沥干油即可。 (图3-5)
5.将鸭肉斩件,配搭酱料和配料一起享用。 (图6)

【INGREDIENT】
A: 1 mid-size duck (about 1.6kg)
B: 10 stalks spring onion, 1 slice ginger, 10g Chinese peppercorn, 2 stalk cinnamon, 2 pcs star anise

【CONDIMENTS】mix well
1 tsp cinnamon powder, 1 tbsp salt, 2 tsp chicken stock powder

【SEASONING】mix well
1 tbsp Chinese cooking wine, 1 tbsp soy sauce

【SAUCE INGREDIENTS】mix well
1 tbsp sweet bean paste, 2 tbsp soy sauce, 1 tbsp dark soy sauce, 2 tbsp sugar, 1 tbsp sesame paste, 5 tbsp water

【SUB-INGREDIENTS】
20g juliennes spring onion, 10 section cucumber, 10pcs mini buns

【METHOD】
1.Pat dry duck after cleaning, marinate its inner cavity with half of the condiments; another half rub its outside; stay for 2 hours. (pic 1)
2.Rub the duck with seasoning and mixes with ingredients B, place all in a plate and steam for 2 hours. (pic 2)
3.Boil the mixed sauce ingredients until thicken.
4.Heat oil in wok to about 70% hot, coat the steamed duck with some tapioca flour and deepfry until crispy; drain. (pic 3-5)
5.Chopped the duck meat and serve with sauce and sub-ingredients.(pic 6)
