    Step 1

    在娘惹亚叁酱中加入黄姜粉拌匀备用。 Combine Assam Sauce with turmeric powder, stir well.

    Step 2

    把鱼切成4-5 块,以少许盐腌好。在炒锅中热半锅油,放入鱼块 炸至微黄。 Cut fish into 4 - 5 cutlet pieces, lightly season with salt. Heat half pot oil in a frying pan and deep-fry the fish until lightly golden.

    Step 3

    另外在锅内热少许油,把配料爆香,然后加入姜花,再炒一会。 Heat oil in a pot and fry sub-ingredients for a while. Add pink ginger bud halves and sauté well.

    Step 4

    加入酱料, 炒均。加入亚叁汁及茄子煮至滚。 Add in sauce ingredients and fry briefly. (pic 3) Add tamarind juice mixture, baby brinjal. Bring to a boil.

    Step 5

    最后加入鱼及羊角豆,焖煮5 分钟后加入调味料,撒入姜花丝即可盛出。 Add fish, ladies finger, and simmer for 5 minutes, season to taste. Sprinkle over with pink ginger bud shreds.
