十谷米饭团便当 Multi Grains Rice Ball Bento

【米饭材料】
十谷米饭2杯、香米饭2杯
【饭调味料】
白醋30毫升、白糖20克、盐 1⁄2茶匙
【馅料】
A:肉松、芝麻、紫菜各30克(混合)
B:吐拿鱼1罐
C:油2汤匙、虾米30克、蒜茸1汤匙、菜脯碎80克(浸泡片刻沥干)、蚝油1茶匙、生抽1茶匙、白糖2茶匙、水2汤匙、粟粉 1⁄2茶匙+1茶匙水(勾芡用)
【馅料C做法】
烧热油爆香虾米及蒜茸,放入菜脯碎炒香,调入剩余材料C煮至稍干,勾芡便可。
【做法】
1. 将饭调味料用小火煮至糖和盐溶解,熄火,分成2等份待用。
2. 趁热将十谷米饭及白米饭拌入一份饭调味料,待凉些各分成三份。
3. 将调味米饭分别包入馅料A、B及C,用保鲜膜裹紧即可装盒,随意配上水果。(图2-6)


【Ingredients for Rice】
2 cup multi brown grains rice, 2 cups fragrant white rice
【Seasoning for Rice】
30ml white vinegar, 20g sugar, 1⁄2 tsp salt
【Filling Ingredients】
A:30g each of meat floss, sesame seeds & seaweed (mixes all)
B:1 canned tuna flake
C:2 tbsp oil, 30g dried shrimp, 1 tbsp chopped garlic, 80g chopped pickled radish (soaked in water & drain), 1 tsp oyster sauce, 1 tsp soy sauce, 2 tsp
sugar, 2 tbsp water, 1⁄2 tsp corn flour + 1 tsp water (thickening)
【Method for filling C】
Heat oil in wok, sauté dried shrimp and garlic until fragrant, toss in pickled radish, seasoning and water, cook until gravy reduced, thicken with some starch, done.(pic 1-2)
【Method for Rice】
1. Boil rice seasoning in low heat till sugar dissolved, turn off heat, divide mixture into 2 portions.
2. Mix rice seasonings with both type of rice while still hot, and then separate each into 3 portions.
3. Wrap each portion of cooked rice with filling A, B & C accordingly with cling foil, place in bento container with some fruits.(pic 2-6)
