口水鸡Steamed Chicken With Chili Oil

【材料】
白斩鸡½只(斩块)

【汁料】
姜碎1大匙、葱头仔碎1大匙、豆酱(磨)1大匙、红辣椒3条(去籽磨烂)、水3大匙

【调味料】
花生酱1大匙、盐¼小匙、生抽1大匙、白醋1小匙、胡椒粉¼小匙、花椒红油2大匙、炒香芝麻1大匙、芫茜碎适量

【制法】
1. 将白斩鸡摆在碟里。
2. 用2大匙油爆香姜碎和葱头仔碎,加入豆酱和辣椒泥炒香。
3. 加入水和调味料拌匀煮滚,淋在白斩鸡上。
4. 淋上花椒红油,洒上芝麻和芫茜碎,即可。
5. 花椒红油做法 :把5大匙油、1大匙辣椒粉和1小匙花椒放入锅里用小火爆至油红色,待冷取油即可。

【INGREDIENTS】
½ boiled chicken (chop into pieces)

【SAUCE】
1 tbsp chopped ginger, 1 tbsp chopped shallot, 1 tbsp fine soy bean paste, 3 red chili (seeded and pounded), 3 tbsp water

【SEASONING】
1 tbsp peanut butter, ¼ tsp salt, 1 tbsp soy sauce, 1 tsp white vinegar, ¼ tsp pepper, 2 tbsp Chinese peppercorn & chili oil, 1 tbsp toasted sesame seeds, some chopped coriander

【METHOD】
1.Arrange boiled chicken meat in plate.
2.Saute chopped ginger and shallot with 2 tbsp oil until fragrant; toss in soy bean paste and chili boh.
3.Add in water and seasoning, bring to boil and pour over chicken meat.
4.Drizzle in red chili oil, sprinkle sesame seeds and coriander on top to serve.
5.To prepare chilli oil: Heat 5 tbsp oip in a small pot, saute 1 tbsp pepper, 1 tsp Chinese peppercorn till turn red color, let cool down before use.
