    豆腐本身淡淡无味,但是可以跟很多食材搭配。这道咸酥黄金豆腐用了咸蛋点缀,让其美味更上一层楼。

    Step 1

    将南瓜去皮及籽,切片,蒸熟压成茸备用。Pumpkin seeded and cut into slices, then steam and mashed.

    Step 2

    咸蛋黄压碎;豆腐一开四,以热油炸至香酥,捞出沥油。Crush salted egg yolk; cut tofu into quarters and deep fry until golden brown, drain.

    Step 3

    镬中留少许油,放入咸蛋黄炒香,加入咖喱叶、南瓜泥及调味料炒匀,淋在炸香的豆腐上,即可上桌。Keep some oil in wok, sauté egg yolk until fragrant, toss in curry leaves, mashed pumpkin and seasonings, stir to mix, pour over fried tofu, serve immediately.
