奶油虾Milky Butter Prawns

【材料】
大虾1公斤、牛油3汤匙、蒜头3至5瓣、咖喱叶2至3支、红辣椒1至2条(随意)

【调味料】
淡奶3汤匙、盐1茶匙、糖1⁄2茶匙、胡椒粉少许

【做法】
1. 大虾洗净,修剪虾须;蒜头拍扁切细;辣椒切细。
2. 平底锅烧热,下牛油煮溶后放入虾中火煎1分钟至虾壳变硬后即翻面。(图1-2)
3. 放入蒜茸、咖喱叶和辣椒。(图3)
4. 加盖以小火焖1分钟。打开盖子,撒入一点盐、糖和胡椒粉调味。
5. 倒入淡奶,小火搅匀即可。(图4)

【Ingredients】
1 kg large prawns, 3 tbsp butter, 3 to 5 cloves garlic(chopped), 2 to 3 stalks curry leaves, 1 to 2 red chillies (as desired, chopped)

【Seasoning】
3 tbsp evaporated milk, 1 tsp salt, 1⁄2 tsp sugar, a pinch of pepper

【Method】
1. Rinse and clean the prawns, trim the feelers.
2. Heat up a flat-bottomed pan, add butter and melt it over low heat. Arrange prawns in the pan, pan fry for 1 minute over medium heat and overturn the prawns. (pic 1-2)
3. Sprinkle chopped garlic, curry leaves and chillies on the prawns. (pic 3)
4. Cover the pan and cook over low heat for 1 minute.Remove cover. Sprinkle with a pinch of salt, sugar and pepper to taste.
5. Pour in evaporated milk and stir over low heat until well mixed. Serve. (pic 4)
