川式鬼马炒茄丁 Fancy Szechuan Style Eggplant

【材料】
茄子300克、豆碎(素虾米)20克、红辣椒1条(切碎)、子姜(切碎)1小匙、油条1⁄2条、芫茜少许
【调味料】混合
辣椒酱2大匙、豆酱1⁄2大匙、生抽2大匙、糖1小匙、粟米粉1⁄2小匙、清水3汤匙,、麻油1小匙
【做法】
1.把茄子略去皮,切大丁,先用热油炸香,滤油。
2.豆碎放入碗,用热油淋至脆,滤油待用。(图1)
3.油条切小块,放入热油略炸脆,滤油待用。
4.锅里留少许油爆香姜碎,加入茄子、辣椒碎和调味料拌炒,起锅前拌入炸油条,再浇上豆
碎、芫茜即可享用。(图2-4)

【Ingredients】
300g eggplant, 20g mock dried shrimp (chopped), 1 red chili (chopped) , 1 tsp chopped ginger, 1⁄2 Yaw Zha Kuai, some coriander
【Seasoning】combined
2 tbsp chili sauce, 1⁄2 tbsp soy bean paste, 2 tbsp soy sauce, 1 tspsugar, 1⁄2 tsp corn flour, 3 tbsp water, 1 tsp sesame oil
【Method】
1.Peel part of the skin of eggplant and cut into big cubes; and then deep fry until fragrant.
2.Blanch mock shrimp by rinsing hot oil on it until crispy, drain.(pic 1)
3.Cut Yaw Zha Kuai into small pieces and deep fry until crispy, drain.
4.Keep some oil in wok, sauté ginger until fragrant; and then toss in eggplant, chopped red chili and seasoning; stir in Yaw Zha Kuai, dish out and sprinkle fried mock shrimp and coriander on top, done.(pic 2-4)
