巧克力芝士海绵蛋糕 Chocolate Cheddar Chiffon Cake

【材料】
A: A蛋黄4个、鲜奶115毫升、栗米油80克、盐1⁄2茶匙、普通面粉135克、可可粉15克、发粉1茶(全部粉料过筛)
B:Cheddar 芝士茸70克
C:A蛋白4个、细糖130克、塔塔粉 1⁄2茶匙
装饰:糖粉适量
【做法】
1.把烤炉预热至180℃,准备一个9寸戚风蛋糕盘,必须确保它完全没有油渍。
2.把材料C的蛋白放入电动搅拌缸中,以中至高速搅拌至发起,然后加入糖和塔塔粉,搅拌至发起。(图1)
3.另外把材料A里的蛋黄,牛奶,油及盐搅拌均匀,然后慢慢加入面粉,发粉及可可粉,搅拌均匀后加入蛋白和芝士茸, 搅拌至刚刚混合即可。(图2-4)
4.把面糊倒入蛋糕盆里,放入烤炉烤40分钟,或以竹签插入测试,以不沾物为准。(图5-6)
5.从烤炉取出蛋糕盆,倒转置放,待凉。(图7)
6.凉后以尖刀把蛋糕取出,撒上糖粉装饰后切片吃。(图8)

【Ingredients】
A: 4 “Grade A” yolks, 115 ml fresh milk, 80 ml corn oil, 1⁄2 tsp salt, 135 g plain flour(sifted), 15 g cocoa powder (sifted),1 tsp baking powder(sifted)
B: 70g cheddar cheese (grated)
C: 4 “Grade A” whites, 130g caster sugar, 1⁄2 tsp cream of tartar
Decoration: sifted icing sugar
【Method】
1. Preheat oven @ 180℃, set aside a 9” round clean tube or chiffon cake pan.
2. Pour the egg whites of C ingredients into a clean mixing bowl. Whisk using the balloon whisk on medium to high speed, adding in sugar and cream of tartar until egg whites are stiff. Whites are stiff when the machine
is stopped and the whisk is raised, you can see peaks formed.(pic 1)
3. In another bowl, combine ingredients A yolks, milk , oil, salt. Fold in sifted flour, baking powder and cocoa powder. Then fold into the whites with the cheddar until just mixed. (pic 2-4)
4. Pour batter into the chiffon cake pan and bake in preheated oven for 40 minutes or until skewer inserted comes out clean.(pic 5-6)
5. Remove cake pan from oven, invert the cake pan and leave to cool.(pic 7)
6. Once cool, remove the cake by using a thin sharp knife removing the cake from the pan.Sift icing sugar for some decoration, slice and serve immediately.(pic 8)
