干煎亚叁虾 Panfried Assam Prawns

【材料】
中虾12只、亚叁膏50克、盐1⁄2 茶匙、白糖2汤匙或适量、胡椒粉1⁄4 茶匙、大葱1粒(切4瓣)
、辣椒干6条(剪段)、咖哩叶2束、食油3汤匙
【调味料】
鸡粉1⁄4茶匙、黑酱油1⁄8茶匙
【做法】
1. 把亚叁膏和适量的水混合后洗出亚叁汁。
2. 把亚叁汁、白糖、盐及胡椒粉混合,加入虾腌妥。(图1)
3. 用不黏锅热食油,爆香咖哩叶和辣椒干。(图2-3)
4. 加入虾和调味料,以中火翻炒。(图4-5)
5. 加入大葱,然后快炒至汁干即可。(图6)

【Ingredients】
12 nos medium large prawns, 50g assam paste,1⁄2 tsp salt, 2 tbsp sugar or to taste, 1⁄4 tsp pepper, 1 onion(quartered ), 6 dried chillies(cut
into sections and seeds removed), 2 stalks curry leaves, 3 tbsp E. Excel Blended Cooking Oil
【Seasonings】
1⁄4 tsp chicken stock powder, 1⁄8 tsp dark soy sauce
【Method】
1. Mix tamarind paste with adequate amount of water. Strain for assam juice.
2. Add assam juice, sugar, salt and pepper to the prawns. Toss to mix.(pic 1)
3. Heat E. Excel Blended Cooking Oil in a non- stick pan, fry curry leaves and dried chillies until aromatic.(pic 2-3)
4. Add in prawns and seasoning. Pan fry over medium heat. (pic 4-5)
5. Add in onion, toss and fry briskly until sauce is dry.(pic 6)
