德式圣诞蛋糕

蛋糕材料
高筋面粉500克、杏仁馅60克、鸡蛋120克、杏仁精3克、Vanilla香精3克、橙皮茸6克、柠檬皮茸6克
500g bread flour, 60g marzipan, 120g whole egg, 3g bitter almond flavour, 3g vanilla flavour, 6g orange
zest, 6g lemon zest

馅料:杏仁馅60克(搓成长条)
Filling Ingredients: 60g Marzipan (roll into long strip)

沾面材料:热牛油适量、糖粉适量
Coating Ingredients: some hot butter and some icing sugar

德式圣诞蛋糕混合料
牛奶120克、低筋面粉180克、蜜糖60克、即发酵母18克
120g milk, 180g cake flour, 60g honey, 18g dry yeast

做法: 把所有材料混合后让它在室温里醒发30分钟。
Method: Mix all together and rest for 30 minutes in room temperature.

含盐牛油料
盐10克、德式圣诞蛋糕香料12克、牛油260克
10g salt, 12g stollen spices, 260g butter.

做法: 把所有材料混合搅拌至浓郁。
Method: Mix all ingredients and blend until creamy.

腌果材料
葡萄干300克、柠檬皮糖120克、橙皮糖140克、朗姆酒100克、杏仁碎粒100克
300g raisins, 120g candied lemon peel, 140g candied orange peel, 100g rum, 100g whole almond
(chopped)

做法:把所有材料混合后收3天。
Method: Combine all ingredients and rest for 3 days.

组合方法
1.把德式圣诞蛋糕混合料和所有蛋糕材料混合均匀。(图1)
1.In an electric mixing bowl, combine the stollen sponge with cake ingrediensts, mix well.(pic 1)

2.逐渐加入含盐牛油,快速搅拌12分钟。
2.Add in salt mixture butter little by little, knead for 12 minutes in fast speed.

3.让面团休息醒发1小时,加入腌果,再搁一会。(图2-3)
3.Rest dough for 1 hour and knead in the marinated fruits, rest for a short while.(pic 2-3)

4.取出面团杆平,放上杏仁馅卷起,排入烤盘,放入预热至180℃的烤炉烤30分钟至熟。(图4-5)
4.Flatten the dough, place the marzipan on top, roll up and bake in pre-heat oven at 180℃ for 30
minutes. (pic 4-5)

5.取出蛋糕沾热牛油,再滚上糖粉即可。(图6-7)
5.After baking, dip in hot butter and roll in icing sugar.(pic 6-7)
