排骨咖哩Curry Spareribs

【酱料】
排骨500克、洋葱3粒、马铃薯3粒、香茅2根、红辣椒3条(切小片)、椰浆1杯、咖哩叶1束

【咖哩糊料】
小葱头茸50克、蒜泥20克、咖哩粉2汤匙

【调味料】
盐1/2茶匙、糖1茶匙

【材料】
1.排骨洗净切小块,川烫好沥干备用;马铃薯去皮洗净切小块。
2.锅内热油,爆香蒜茸与小葱头茸,放入咖哩粉、调味料及少许水炒香成咖哩糊料,盛出。(图1)
3.镬内热适量油,将马铃薯炒至半软后,加入大洋葱及排骨一起翻炒至香,注入清水1杯煮至肉软。(图2-3)
4.加入咖哩糊料、香茅、红辣椒及椰浆煮滚。加入咖哩叶,转小火煮约20分钟后即可上桌。(图4)

【Ingredients】
500g pork ribs(cut into small bite), 3 big onion, 3 potatoes, 2 stalk lemon grass, 3 stalk chilies, 1 cup coconut milk, 1 stalk curry leaf

【Curry paste】
50g chopped shallot, 20g chopped garlic, 2 tbsp curry powder

【Seasoning】
1/2 tsp salt, 1 tsp sugar

【Method】
1.Wash and cut pork ribs in small bite, blanch in hot water, drain and set aside; skinned potatoes and cubed.
2.Heat oil in wok, saute shallot and garlic till aromatic. Add in curry powder, some water and seasoning, fry well become cur-ry paste, dish out. (pic 1)
3.Add some oil to the wok, fry the potato cubes until lightly browned and soft, add in big onion, pork ribs and 1 cup of water, cook till meat tender.(pic 2-3)
4.Add in curry paste, lemon grass, red chilies and santan, bring to boil. Turn to low heat, add cur-ry leaves, simmer for about 20 minutes, done.(pic 4)
