杂锦煎豆腐 Pan-fried Tofu

【材料】
豆腐2砖(切大片)、肉碎120克、青辣椒1条(切末)、蘑菇3粒、红萝卜20克、小葱茸1茶匙、蒜、姜
茸少许、青葱粒适量
【调味料】
A:盐1⁄4茶匙、胡椒粉少许、麻油少许、生粉1茶匙

B:高汤1饭碗、蚝油1汤匙、生抽1汤匙、麻油1⁄2茶
匙、绍兴酒1汤匙、粟粉水适量(勾芡)
【做法】
1. 将蘑菇切片;红萝卜切末;肉碎加入调味料A拌匀,备用。(图1-2)
2. 豆腐以少许油煎至两面微黄,取出盛碟。(图3)
3. 镬中余油炒香小葱茸、蒜茸及姜茸,加入肉碎炒至转色,加入蘑菇和红萝卜炒香。(图4-5)
4. 倒入调味料B煮滚,并拌入青辣椒,最后淋在豆腐上面,撒入青葱粒便可。(图6-8)

【Ingredients】
2 blocks tofu (cut into thick slices), 120g minced meat, 1 green chili (chopped), 3 pcs button mushroom, 20g carrot, 1 tsp each of chopped shallot, garlic and ginger, some chopped spring onion
【Seasoning】
A:1⁄4 tsp salt, dash of pepper and sesame oil, 1 tsp corn flour
B:1 bowl stock, 1 tbsp oyster sauce, 1 tbsp soy sauce, 1⁄2 tsp sesame oil, 1 tbsp Chinese cooking
wine, some starch for thickening
【Method】
1. Slice button mushrooms and chop carrot; marinate minced meat with seasoning A.
2. Sear tofu with some oil until both side turns brown, dish out and arrange in serving plate.(pic 3)
3. Use remaining oil to sauté shallot, garlic and ginger until fragrant, toss in minced meat and then add
in mushroom and carrot.(pic 4-5)
4. Pour in seasoning B and bring to boil; toss in green chili and then pour sauce over tofu, sprinkle spring
onion over to serve.(pic 6-8)
