椰浆饭寿司 Nasi Lemak Sushi

椰浆寿司饭材料
白米2杯、椰浆4杯、班兰叶2片(打结)、盐适量

白饭汉堡做法 :白米洗净后放入电饭煲煮成饭。趁热把饭弄松,舀入圆圈模具,铸成汉堡形状,然后收入冰箱让它定型后,煎至两面微黄即可
配料
青瓜(切长条)、红萝卜(切长条)、水煮蛋(切片)
海苔5-6片
冷当羊肉馅料
羊肉600克(切2公分方块)、椰浆400毫升、清水400毫升
研磨香料
辣椒干10条(浸泡)、大葱130克、蒜头4瓣、姜20克(去皮)香茅4枝(切细)、蓝姜20克(去皮)、大小茴香籽各1茶匙(烤香)
配料
现买炒椰丝60克、疯柑叶4片、黄姜叶2片、黄糖2汤匙、盐2茶匙
做法
1 把研磨香料及全部冷当羊肉材料放入深锅内,以中火烹煮,间中搅拌,若太干可加水。
2 煮约45-60分钟至肉软后,加入其他配料,熄火。
组合
1 取1片海苔,放上少许冷却的椰浆饭,稍微压紧后才放上青瓜和红萝卜,然后叠上冷当羊肉及鸡蛋。 (图1-4)
2 顶层再铺少许椰浆饭,压紧后用海苔卷起,切片上桌。 (图5-8)

NASI LEMAK SUSHI INGREDIENTS
2 cups long grain rice, 4 cups coconut milk, 2 knotted pandan leaves, salt to taste

METHOD: Wash rice and put all ingredients into an electric rice cooker and cook. Quickly fluff up cooked rice, fill them into ring to form burger shape; keep in fridge to set.Once the rice is set, sear on hot pan until both sides turns brown.
GARNISHING
Cucumber (cut into long strip), carrot(cut into long strip), hardboiled egg (sliced), 5-6 pcs nori sheets
RENDANG MUTTON FILLING
600g mutton (cut into 2cm cubes), 400ml coconut milk, 400ml water
SPICE PASTE
10 stalks dried chilly(soaked), 8 – 10 stalks chilli padi, 130g big onions, 60g shallots, 4 cloves garlic, 20g ginger (skinned), 4 stalks serai (sliced), 20g galangal (skinned & sliced), 1 tsp cumin seeds (toasted), 1 tsp fennel seeds (toasted)
SUB-INGREDIENTS
60g kerisek(store bought), 4 kaffir lime leaves, 2 kunyit leaves, 2 tbsps palm sugar, 2 tsps salt
METHOD
1 Pour the spice paste with all rendang filling ingredients into a heavy based pot, simmer over medium heat, stirring occasionally. Add water if needed should gravy dries up.
2 Once meat is tender about 45-60 minutes, add in all sub-ingredients and adjust taste. Turn off heat.
TO ASSEMBLE
1 Lay a sheet of nori sheet, top with some cold nasi lemak and press lightly down. Put in cucumber strip, carrot strip & rendang mutton before placing the egg. (pic 1-4)
2 Cover another layer nasi lemak on top, press hard so that the sushi sticks together, slice and serve. (pic 5-8)
