丝瓜可谓是清热泻火、凉血解毒的“好帮手”。 中医认为丝瓜性寒、味甘,入肝、胃经,具有消暑利肠、祛风化痰、凉血解毒的功效。

    Directions

    Step 1

    丝瓜去皮,切成5cm段后,将心挖空,泡冷水5分钟,取出沥干备用。Peel loofah and cut into 5cm sections; hollow out the seeds and soak in cold water for 5 minutes, drain.

    Step 2

    虾胶加入鱼胶拌匀,再加入调味料A拌至起胶,做成馅料。Mixes shrimp paste with fish paste, add in seasoning A, blend till springy as filling.

    Step 3

    丝瓜段内部沾少许薯粉后,填入馅料,排入蒸盘中。Coat the hollow of loofah with dash of tapioca flour, stuff in filling.

    Step 4

    将丝瓜段用大火蒸15分钟。Steam the stuffed loofah in high heat for 15 minutes.

    Step 5

    另外热锅,用麻油爆香姜泥,倒入蒸丝瓜产生的汤汁煮沸,加入调味料B煮成酱汁。In another clean wok, heat up sesame oil, toss in ginger puree and add in liquid from steam loofah; once boiled, add in seasoning B and use as sauce.

    Step 6

    取出蒸好的丝瓜盅,淋上酱汁即可上桌。Place steamed loofah on plate, pour sauce over to serve.
