    Step 1

    把蛋稍微打散,然后置放一旁。起锅热油,以大火把蛋液炸至金黄色酥脆,取出滴干油。Lightly beat egg and put aside.Heat oil in a wok,slowly stir in the egg sauce. Keep stirring over high heat until egg begins to turn golden and crispy.Dish out onto a plastic container to drain well.

    Step 2

    把面糊材料混合,沾鲍鱼菇,然后炸至酥脆金黄色,滴干油。Combine batter ingredients well.Dip abalone mushrooms into batter and deep-fry in hot oil until golden and crispy.Dish out and put aside.

    Step 3

    留1汤匙油在锅,把指天椒和咖哩叶爆香,然后加入调味料。Leave 1 tablespoon oil in the hot wok,sauté bird’s eye chillies and curry leaves until fragrant.Add in seasoning.

    Step 4

    加入炸鲍鱼菇和蛋,迅速炒均后盛出,撒上黑胡椒粉即可。Add in pre-fried abalone mushrooms and egg.Stir briskly to combine.Sprinkle in coarse ground black pepper to mix.
