烧鸭芋头汤Roasted Duck Yam Soup

【材料】
姜片30克、蒜茸1大匙、葱头仔碎1大匙、水2公升、烧鸭¼只(斩块)、芋头300克(去皮切块)、红萝卜片60克

【调味料】
生抽2大匙、盐1小匙、胡椒粉¼小匙、麻油1小匙

【装饰】
青葱1棵(切小段)

【制法】
1. 用2大匙油爆香姜片、蒜茸和葱头仔碎,加入水煮滚。
2. 加入其余材料,转小火加盖煮30分钟,至芋头软。
3. 加入调味料煮多5分钟,盛起,洒上青葱段即可。

【INGREDIENTS】
30g ginger slices, 1 tbsp chopped garlic, 1 tbsp chopped shallots, 2 litres water, ¼ roasted duck (chop into small pieces), 300g yam (peel and cut into pieces), 60g carrot slices

【SEASONING】
2 tbsp soy sauce, 1 tsp salt, ¼ tsp pepper, 1 tsp sesame oil

【GARNISHING】
1 stalk spring onion, cut into sections

【METHOD】
1.Saute ginger, garlic and shallot with 2 tbsp oil until fragrant; pour in water and bring to boil.
2.Add in all other ingredients and simmer in low heat with lid cover until yam soften.
3.Add in seasoning and simmer for another 5 minutes; dish out and spread spring onion on to garnish.
