将鸡肉和猪脚放入滚水中川烫,除去杂质,洗净。Blanch pig's trotter and chicken in boiling water. Remove and rinse well.
在锅中烧热麻油,把姜丝和胡椒粒爆香。Heat sesame oil, fry ginger slices and peppercorns until fragrant.
加入鸡肉和猪脚,炒 1-2 分钟,然后倒入清水和黑木耳,煮至滚。Add trotter and chicken; fry for 1-2 minutes. Pour in water and add black fungus. Cook to a boil.
转小火,焖煮 40-45 分钟。Reduce the heat and cook for 40-45 minutes.
加入姜酒,米酒及酱油,然后加盖再焖煮 10 分钟至香味溢出,必要时加盐调味。Add ginger wine, Chinese rice wine and light soy sauce. Cover pot and simmer for 10 minutes until fragrant. Adjust seasoning with salt.
盛出趁热吃。Dish out and serve hot.
