    小贴士:福州人爱喝红酒,将红糟用作调味品,算是很好的废物利用。红糟色泽鲜红,是天然红色素,具有防腐去腥,增加香味、鲜味和调色的作用。福州饮食中,多海产、禽肉,用红糟来去腥、去膻、增香,几乎就是绝配。福州人相信红糟具有降低胆固醇、降血压、降血糖及防癌等特殊功能,更有难能可贵的天然红色素,是珍贵的美味健康天然食品。

    Step 1

    鸡洗净切块后,以蚝油腌制备用。Wash and cut the chicken into pieces, marinate in oyster sauce for later use.

    Step 2

    青瓜和胡萝卜洗净切块备用。Wash the cucumbers and carrots and cut them into pieces, set aside.

    Step 3

    起热锅,免油把鸡炒干水出油捞起备用。Heat the wok, fry the chicken without oil until the oil came out from chicken, remove and set aside.

    Step 4

    爆香姜葱与红酒糟,把鸡块倒入慢火炒香均匀。Saute ginger, shallots and Fuzhou Hong Zao until fragrant, add chicken pieces and stir-fry evenly with low heat.

    Step 5

    倒入淹盖过材料一半的温水或上汤把鸡焖收汁。Pour in warm water that covers half of the ingredients or stock to simmer the chicken until cooked.

    Step 6

    下调味料后,加入青瓜和胡萝卜炒拌均匀后即可盛盘享用。After seasoning, add in cucumber and carrot, stir-fry evenly and serve on a plate.
