红烧肉丸Braised Meat Balls

【材料】
五花肉500克、急冻蚧肉120克、冬瓜650克、葱花适量、上汤800克、干粟粉1/2碗

【调味料】
A:盐1茶匙、粟粉1汤匙、胡椒粉少许、麻油1茶匙
B:鸡精粉1茶匙、盐1/2茶匙、生抽1汤匙、蚝油1茶匙、绍兴酒1汤匙

【做法】
1.将五花肉去皮剁碎;蚧肉挤干水份;冬瓜去籽及皮切块。(图1)
2.把五花肉及蚧肉放入大碗中,加入调味料A捞匀,然后挞至起胶。(图2)
3.手掌涂一些油把肉碎材料分成4等份,揉成丸状轻轻用手托一托,一方面把空气压出,一方面使肉丸表面光滑。(图3)
4.烧热炸油,把丸子沾上干粉,然后投入热油中炸至金黄色,捞出沥干油备用。(图4-5)
5.将冬瓜放入油中过油,取出以沸水冲洗过,放入瓦煲中,面上放入肉丸并注入上汤盖上,以中火焖煮约10-15分钟。加入调味料B略滚一会便可上桌。(图6-8)

【Ingredients】
500g pork belly, 120g frozen crab meat, 650g winter melon, some chopped spring onion, 800ml stock, 1/2 bowl corn flour

【Seasoning】
A:1 tsp salt, 1 tbsp corn flour, dash of pepper, 1 tsp sesame oil
B:1 tsp chicken powder, 1/2 tsp salt, 1 tbsp soy sauce, 1 tsp oyster sauce, 1 tbsp Chinese cooking wine

【Method】
1.Minced the pork belly without skin, squeeze out water in crab meat; winter melon skinned & seeded.(pic 1)
2.Marinate minced meat and crab meat with seasoning A and blend with hand until springy.(pic 2)
3.Grease palm with some oil and then apportion minced meat ingredients into 4, shape them roundly and press lightly to release air inside.(Pic 3)
4.Heat oil in wok; coat the meat balls with corn flour and then deep fry until golden brown, drain.(pic4- 5)
5.Blanch winter melon in hot oil and then blanch again in hot water; place in clay pot and top with meat balls; pour stock over and cover with lid, simmer in medium heat for 10-15 minutes, season with seasoning B and dish out.(pic 6-8)
