美味香蕉蛋糕 The Most Fabulous Banana cake

【材料】

无盐牛油125克(室温,切小块)、细糖200克、盐1⁄4茶匙、A蛋2粒、熟香蕉200克(磨烂)、普通面粉225克、发粉3茶匙、小苏打粉1⁄2茶匙(全筛过)、鲜奶50毫升、清水50毫升、香草精11⁄2 茶匙、核桃碎50克

15 X23 公分长方形烤盘1个(涂油后撒上少许面粉)

【糖焦顶料】

黄糖100克、无糖奶油70毫升、牛油30克

【糖焦做法】

1.把黄糖放入深锅以中火煮至溶解,然后加大火煮4-5分钟至起泡即成糖焦,要小心顾火以免煮成苦味。

2.熄火后把奶油和牛油加入小心搅拌,然后让它冷却,再装入软瓶子里。

 

【蛋糕做法】

1.把烤炉预热至180℃。

2.用电动搅拌器,把牛油,糖及盐搅拌至发起,然后逐个加入鸡蛋,搅拌均匀。(图1-2)

3.把磨烂香蕉加入,搅拌均匀。(图3-4)

4.慢慢把筛过的面粉,发粉及小苏打粉加入拌匀。(图5)

5.加入液体材料,香精及核桃碎,搅拌成面糊后倒入烤盘里。(图6-8)

6.放入烤炉,烤30-35分钟,全程不要开启烤炉的门,以免中间凹陷。让蛋糕完全冷却后才扣出。(图9-10)

7.把糖焦淋在蛋糕上面,再撒上少许糖粉,可趁热吃。

【Ingredients】

125g unsalted butter(room temperature, cut into small chunks), 200 g castor sugar,1⁄4 tsp salt, 2 “Grade A” eggs, 200 g ripe banana (mashed), 225 g plain flour (sifted)

3 tsps baking powder (sifted), 1⁄2 tsp bicarbonate of soda (sifted), 50 ml fresh milk, 50 ml water, 11⁄2 tsps vanilla extract, 50 g chopped walnuts

15cm x 23cm rectangle cake tin, greased & dusted with extra flour

【Caramel sauce:】

100 g brown sugar, 70ml dairy non-sweetened cream, 30g butter

【To prepare caramel sauce:】

1.Place the sugar into a heavy-based sauce pan, then cook over a medium heat until the sugar has dissolved. Turn up the heat and bubble for 4-5 mins until you have caramel. Be careful at this stage as it tends to get burnt, making the caramel sauce taste bitter.

2.Turn off the heat, carefully stir in the cream and butter. Stir to mix thoroughly. Leave the sauce to cool, then pour into a squeezy bottle.

【To prepare cake】

1.Preheat oven to 180℃.

2.Using an electric mixer, whrisk butter, sugar, salt until creamy. Beat in eggs one at a time until creamy.(pic 1-2)

3.Add in mashed bananas to mix thoroughly.(pic 3-4)

4.Sieve in flour, baking powder & bicarbonate of soda.(pic 5)

5.Mix in liquid, vanilla essence & nuts. Pour into prepared pan.(pic 6-8)

6.Bake for about 30-35 minutes. Do not open the oven during baking time or the center may sink. Cool cake completely before unmoulding.(pic 9-10)

7.Drizzle with caramel sauce & dust some icing sugar. Serve immediately.
