肉丝拌冬粉 Braised Glass Noodles with Meat

材料 :
猪肉250克(切丝)、冬粉30克(浸软)、青葱1棵(切段)、红辣椒1条(切丝)、嫩姜1块(切丝)、蒜茸1汤匙
调味料 :
A :鸡精粉½茶匙、油1汤匙、水½碗、麻油1茶匙
B :鸡精粉1茶匙、蚝油1汤匙、生抽½汤匙、糖少许、麻油1茶匙、胡椒粉少许、适量粟粉水勾芡
做法 :
1 猪肉切丝,以1茶匙粟粉、麻油、生抽拌匀,放入热油中过油后,沥干油备用。(图1-2)
2 冬粉放入沸水中川烫好沥干水份,加入A调味料煨一煨,摆入碟中。(图3)
3 烧热2汤匙油,爆香姜和蒜茸,加入猪肉丝和调味料B炒匀,注入少许水煮至滚。(图4-6)
4 加入青葱和红辣椒拌匀,并勾芡,便可盛入粉丝上即可。(图7)

INGREDIENTS :
250g lean meat (juliennes), 30g glass noodles(soaked), 1 stalk spring onion (cut sections), 1 red chili (juliennes), 1 piece young ginger (juliennes), 1
tbsp chopped garlic
SEASONING :
A : ½ tsp chicken powder, 1 tbsp oil, ½ bowl water,1 tsp sesame oil
B : 1 tsp chicken powder, 1 tbsp oyster sauce, ½ tbsp. soy sauce, dash of sugar, 1 tsp sesame oil, dash of pepper and some starch water
METHOD :
1 Marinate meat with 1 tsp corn flour, sesame oil and soy sauce; and then blanch in hot oil, drain.

2 Blanch glass noodles in boiling water, drain and braise with seasoning A briefly, set aside. (pic 3)
3 Heat 2 tbsp oil in wok, sauté ginger and garlic until fragrant; toss in meat and seasoning B, pour in water and bring to boiled. (pic 4-6)
4 Add in spring onion and red chili; thicken with starch and dish out, pour over glass noodles to serve. (pic 7)
