    Directions

    Step 1

    皮料:将马铃薯去皮切成四块,放进滚水中煮熟,捞起趁热按烂,加入其余材料充分搅拌均匀成面团备用。For skin: Peel potato and cut into quarters, boil in boiling water until cooked; mash it while hot; mixes with all other ingredients and set aside.

    Step 2

    馅料:烧热油爆香蒜茸和葱头茸,再加入猪肉碎和调味料炒匀,勾芡,试味即可盛起待冷备用。For filling: Sauté garlic,shallots and black pepper until fragrant,toss in minced meat and seasoning;thicken and dish out to cool down.

    Step 3

    将马铃薯泥搓成球形,用手指轻轻的挖个小洞包入馅料,揉圆。Shape potato mixture into balls,dig a hole on center,stuff in filling and shape it again.

    Step 4

    烧热炸油,马铃薯球粘上蛋液再沾上面包糠,放入热油中,中小火炸至金黄色,即可捞起沥干油份,装饰后,趁热享用。Heat oil in wok,coat potato balls with egg sauce follow with bread crumb;deep fry with medium heat until golden brown;drain and serve with garnishing.
