腐包豆腐 Tofu Wraps

【材料】
豆腐1块、香菇2朵(浸软)、津白2片(烫软)、鸡蛋2粒(打散)、淡腐皮2张
【调味料】
A:盐1⁄4茶匙、糖少许、鸡精粉1⁄2茶匙、麻油少许

B:生抽1汤匙、糖1茶匙、蚝油1茶匙、麻油1茶匙
【做法】
1. 将蛋液以少许油炒熟成鸡蛋碎。(图1)
2. 香菇切细末,拌入调味料B拌匀,蒸10分钟。
3. 津白烫软后挤干水份切细丝;豆腐用叉压碎。(图2-3)
4. 把鸡蛋碎和香菇放入大碗中,加入调味料A混合均匀成豆腐馅。(图4)
5. 淡腐皮用湿布抹软,然后剪成四张,取一张腐皮舀入适量的豆腐馅摺包起,然后放入平底不黏
镬,以少许油煎香至金黄色。(图5-8)

【Ingredients】
1 block tofu, 2 Chinese mushroom (soaked), 2 sprigs Chinese cabbage (blanched), 2 eggs (beaten), 2 sheets plain bean curd skin
【Seasoning】
A:1⁄4 tsp salt, dash of sugar, 1⁄2 tsp chicken powder, some sesame oil
B:1 tsp soy sauce, 1 tsp sugar, 1 tsp oyster sauce, 1 tsp sesame oil
【Method】
1. Crumble egg sauce in some hot oil.(pic 1)
2. Chop Chinese mushroom finely and marinate with seasoning B, steam for 10 minutes.
3. Squeeze out water of blanched Chinese cabbage and juliennes; mash tofu with folk.(pic 2-3)
4. Place crumbled egg and Chinese mushroom in bowl, add in seasoning A and mashed tofu and mixes into filling. (pic 4)
5. Wet bean curd sheet with tower and cut into quarter, wrap each with some tofu filling and sear in non-stick pan until fragrant and golden brown. (pic 5-8)
