花雕猪肉 Stir-fried Pork Loin With Chinese Wine

【材料】
猪肉片200克、酱油1汤匙、花雕酒1汤匙、青葱1棵(切段)、白芝麻1茶匙 (预先炒香)
【调味料】
糖½茶匙、盐½茶匙、胡椒粉½茶匙
【做法】
1. 猪肉片加酱油和花雕酒腌制约10分钟。(图1-2)
2. 青葱切成小段,需把葱白和葱叶分开置放。
3. 热锅后放入少量的油,先放入葱白,以中火爆香。(图3-4)
4. 放入猪肉片炒至肉片变白色后再放入葱叶、调味料及适量清水煮滚。(图5-6)
5. 最后洒上白芝麻及濽入少许额外花雕酒,即可上桌。(图7)

【Ingredients】
200g pork loin, 1 tbsp soy sauce, 1 tbsp Hua Diao wine,1 stalk spring onion, 1 tsp sesame seeds (toasted)
【Seasoning】
½ tsp sugar, ½ tsp salt, ½ tsp pepper
【Method】
1. Cut pork loin into slices and marinate with soy sauce and Hua Diao wine for 10 minutes.(pic 1-2)
2. Cut spring onion into sections and separate white and green parts.
3. Heat some oil in wok, saute white part of spring onion until fragrant. (pic 3-4)
4. Add in meat slices and saute until turns white; and then toss in green parts of spring onion, seasoning and some water, bring to boil. (pic 5-6)
5. Sprinkle sesame seeds and some extra Hua Diao wine, dish out.(pic 7)
