苦瓜捞虾滑香底伊面 Bitter Gourd Prawns Yee Mee

材料:
伊面2块、虾胶100克
苦瓜100克(切薄片,泡盐水)
蒜蓉1汤匙、高汤/纯净水500毫升
鸡蛋液1颗、食油适量
芡汁(拌匀):
粟米粉1.5汤匙、纯净水3汤匙
调味料:
蚝油1汤匙、花雕酒1茶匙、胡椒粉适量
制法:
1. 将纯净水煮开后,挤入适量的虾胶,虾胶在滚水中凝固后,即可捞起,备用。(图1)
2. 将干伊面放进滚水中,略煮至软后,即可捞起,沥干水份,备用。(图2)
3. 取一平底锅,倒入少许食油烧热锅后,将伊面平铺在锅内,煎至两面金黄微焦即可上碟,备用。(图3)
4. 使用原锅,下少许食油爆香蒜蓉,加入虾胶翻炒后,下苦瓜片,翻炒至去生。(图4)
5. 倒入高汤和调味料,煮至滚后,倒入芡汁,拌匀,小火煮至滚。(图5)
6. 倒入蛋液,然后将苦瓜虾胶倒在香煎伊面上,即可趁热享用。(图6)

Ingreients :
2 serving yee mee, 100g prawns paste,
100g bitter gourd(slice thin, soaked in salt water),
1 tbsp chopped garlic, 500ml water, 1 egg,
some cooking oil
Stach (mix well) : 1 ½ tbsp. corn flour, 3 tbsp water
Seasoning :
1 tbsp oyster sauce, 1 tsp Chinese wine, dash of pepper
Method :
1. Place prawns paste into boiling water, cook for a while till set, drain and set aside. (pic 1)
2. Arrange yee mee into boiling water, cook till soft
and drain, set aside. (pic 2)
3. Heat some oil in frying pan, toss in yee mee and
fry until both side golden brown, set aside. (pic 3)
4. Use the same frying pan, add some oil and sauté
chopped garlic till fragrant. Toss in prawns paste
bitter gourd, stir well. (pic 4)
5. Pour in stock and seasoning, bring to a boil. Thicken
with some starch, continue simmer with low heat
till boil. (pic 5)
6. Pour in egg sauce, add in bitter gourd prawns paste
on the yee mee, serve hot. (pic 6)
