茉莉花是一种不错的中药材,它的根茎不但可以用来入药,茉莉花有清新空气的作用,尤其是祛除一些臭味。茉莉花不但有止痛的效果,对于心痛等疾病有很好的缓解作用,同时治疗失眠的方面效果也是比较显著的功效。
猪小排斩成长段,清洗干净,沥干水分。Cut pork short ribs into long sections, wash and drain.
猪小排放入锅里,放入姜片、蒜头、茉莉花干、生抽、老抽、胡椒粉、鱼露、蚝油,并加入热水(水量以淹盖过猪小排的水分)。Arrange pork short ribs in a pot, add ginger, garlic, dried jasmine, light soy sauce, dark soy sauce, pepper, fish sauce, oyster sauce, add hot water which can cover all the ingredients.
大火煮开后,小火继续炖煮30分钟至熟,捞出小排,沥干汤汁,晾凉待用。Bring to a boil, continue simmer for 30 minutes or until cooked. Remove the ribs, drain and let it cool for later use.
在放凉的猪小排表面刷上一层生抽和油。Brush a layer of light soy sauce and oil on the surface of the pork ribs.
将锡纸垫在炒锅底部,撒上剩余的茶叶、白糖和白米搅拌均匀,平摊在锡纸上。Put the aluminium foil papaer on the bottom of the wok, top with the remaining tea, sugar and white rice, stir evenly.
将一个大篦子架在锅里,然后将猪小排摆放在篦子上,每块小排之间留一点空隙。Put a big grate on the pot, top with pork chops, leaving a little space between each small chop.
盖上锅盖,大火加热,用冒出的茶香味的烟薰烤小排,6 分钟后即可取出享用。Cover the pot, heat with high heat, grill the small ribs with the tea-scented smoke, take it out and enjoy after 6 minutes.
