菊花蒸鸡 Steamed chicken with chrysanthemum

【 材料 】
菜园鸡1只、杭州野菊花二汤匙(药材店有出售)、
姜3片、蒜头2瓣、葱1棵
【 调味料 】
盐适量、鱼露适量
【 制作方法 】
1. 菜园鸡洗净切小块备用,菊花用热水冲泡5分
钟备用。(图1)
2. 将鱼露、蚝油、干菊花、姜片、蒜茸以大火煮滚
后,转小火熬成菊花汁再用来腌制鸡肉20分钟
备用。(图2-5)
3. 把腌制好的鸡肉和汤汁端上蒸笼,大火煮滚后
再调小火蒸焗1个小时即可上桌享用。(图6-8)

【 Ingredients 】
1 kampung chicken
2 tbsp Hangzhou wild chrysanthemum
( available in medicinal stores )
3 slices of ginger
2 cloves garlic
1 stalk green onion
【 Seasoning 】
dash of salt and fish sauce
【 Method 】
1. Wash the chicken and cut into small pieces for later use.
Soak the chrysanthemum in hot water for 5 minutes.(Pic 1)
2. In a pot cook fish sauce, oyster sauce, dried chrysanthemums,
ginger slices and chopped garlic, bring to a
boil over high heat , turn to low heat and and simmer
for a while, use to marinate the chicken for 20 minutes.

3. Bring the marinated chicken and arrange into the steamer,
steam with high heat and then reduce the heat , continue
steam for 1 hour before serving.(Pic 6-8)
