蟹柳南瓜浓汤 Pumpkin Soup with Crab Meat

【材料】
南瓜肉11⁄2碗(饭碗)、江鱼仔高汤1 1⁄2碗(饭碗)、蟹柳1⁄2碗(切小块)、鸡蛋1粒、葱花1汤匙、姜茸1
茶匙、盐少许、橄榄油少许
【做法】
1. 南瓜肉先入锅蒸至软熟,取出,待凉和高汤一起放入搅拌机搅烂。(图1)
2. 橄榄油倒入小锅烧热,爆香姜茸,加入蟹柳炒匀,倒入打烂的南瓜糊。(图2-4)
3. 转小火,持续搅拌至汤锅边起泡。
4. 以少许盐调味,打入鸡蛋搅匀即可熄火,撒上葱花即可。(图5-7)

【Ingredients】
11⁄2 bowls pumpkin flesh, 11⁄2 bowls anchovy stock, 1⁄2 bowl crab meat (cut small), 1 egg, 1 tbsp chopped
spring onion, 1 tsp chopped ginger, a pinch of salt, some olive oil
【Method】
1. Steam the pumpkin flesh until tender and cooked. Remove and leave to cool. Put pumpkin and an-
chovy stock in a blender and blend until smooth. (pic 1)
2. Heat up olive oil in a small pot, saute chopped ginger until fragrant. Add in crab meat and stir-fry.
Pour in pumpkin puree, mix well.(pic 2-4)
3. Turn to low heat and keep stirring until bubbling at the side of the pot.
4. Season with a pinch of salt. Crack an egg into the soup and stir until well mixed. Remove from heat
and sprinkle with chopped spring onion. Serve. (pic5-7)
